The cascabel chile is moderately hot. It is used in red sauces with tomato or green tomato, as well as in stews with pork, chicken and beef. It is a rich source of vitamins A and C and is an adjuvant to cure infections in the teeth and gums, eliminating pain and inflammation. It is moderately spicy, and has a pleasant flavor slightly reminiscent of walnut. When this chili is shaken, its seeds sound like a rattle or a bell, hence its name.
